Hakuna Matata Fritatta - Crunchy Apple Waldorf



Hakuna Matata Fritatta!! I have NO idea why when I make Fritatta this silly song comes into my head, but it does!!! If your not familiar with the Lion King than this phrase won't make any sense to you - but if you are then I hope it gets stuck in your head too!

I often include an egg meal in my menu planning.  I had a new treatment today for pain (will share more about that once I have had a few treatments)and the practitioner told me to not eat raw or crunchy foods 
I was lucky I had a fritatta in my menu plan

I shredded an entire carrot, and zucchini into a cast iron skillet with a bit of olive oil - i add a clove of garlic for a hint of garlic vs crushed for a blast of garlic ( up to you what you do ), fresh crushed white pepper some thyme and saute. I added a couple of handfuls of baby spinach too.

Top the veggie mixture with sliced cheese - I had some swiss

Top with eggs beaten with a fork - I used 8 - this feeds 4 people and it's all in the same pan that you sautee it in - a scoodge of milk and cream is also beaten in

Top with parmesan cheese. Bake in a 350 oven for 30 minutes.  It should be sortof golden when you pull it out

I like to serve this with apple salad - although that's crunchy, so I just heated those terrible blueberry muffins we made that were still in the freezer

topped it off with a few fresh strawberries - yum

Fritatta's are something that can be a great way to use the ends of odd veggies sitting in the fridge - the whole thing is done in gosh 45 minutes with very little effort

Here's the waldorf:

I so can't get enough of the apple varieties this time of year - take a honey crisp and a jonagold, chop with skin on, add celery, raisens, vanilla yogurt or mayo with a spoon of honey. Variety's are endless --- add;  grapes,walnuts, sunflower seeds,crumbled blue, feta or goat ---- yum

I like the Brown Cow yogurt ( if your not opposed to mooing and a talking cow named lilly their website is too cute) --- if you haven't noticed yet we sortof like cheese and dairy. We'd be in big trouble if we were allergic.
